Franck Baranger et Edouard Bobin, the chefs of le Pantruche, opened a chic bistrot near the fashionable rue des Martyrs, headquarter of the Parisian « Bobos » ( Bourgeois Bohème).
You can sit in the restaurant or at the counter where you have a full view on the kitchen. The restaurant is a shrine of simplicity and creativity, and so is la carte. Special tribute to the oyster (huîtres) Roumégous vapeur exhausted by soja sauce and dust of piment d'Espelette, enhanced by the slight acidity of oxalis, and softened by a citrus chantilly. Betroot soup is a pleasure, roasted figs, are delicious.
